Ingredients for 2 Servings
Watermelon (with rind) –
1 kg
Cucumber –
200 g
Brown onion –
1 large
Feta (low-fat)
– 150 g
Olive oil –
1 tablespoon
Freshly squeezed lemon juice
– 10 ml
Freshly chopped mint
– 1 tablespoon- Freshly chopped parsley – 1 tablespoon
Pepper –
2 pinches (or to taste)
Salt –
2 pinches (or to taste)
Preparation
- Cut the melon into pieces, scoop out the flesh, and dice it.
- Peel the cucumber, quarter it, and dice it.
- Finely chop the onion.
- Finely chop the mint and parsley.
- Place everything in a large bowl. Mix with olive oil and lemon juice, and season with pepper and salt. ENJOY 🙂
